Thanksgiving Roasted Turkey Thighs for Two

If cooking for one, two or a few on Thanksgiving, give my Baby Boomer Bakes original Thanksgiving Roasted Turkey Thighs for Two a try. It’s quick, simple and you’ll have the same great taste you’d find from a 20-pound Tom Turkey that’s roasted in the oven all day! Since you’ve got such control with the herbs, seasonings and roasting with the smaller thigh portions, this method often provides juicier and more tender, flavorful turkey. Best of all you don’t have a big mess to clean up!

Start to finish … you can have homemade roasted turkey on the table in 90 minutes! If you need more turkey around your table …. just double the recipe!

Thanksgiving Roasted Turkey Thighs for Two

Yield: 2 large servings (4 regular servings)

1 (2-portion) pkg fresh turkey thighs

2 tsp sea salt

1/2 tsp coarsely ground black pepper

1 small white onion, quartered

2 stalks celery, cut in thirds

2 large sprigs (8-10 leaves each) fresh sage, (or 2 tsp dried sage)

1/2 stick unsalted butter, softened

Preheat oven to 425.

Wash turkey thighs under cool water. Pat dry with paper towels. Set aside.

In an ovenproof grill pan, or baking pan with rack, place the onion pieces, celery and sage sprigs in two areas about the size of each turkey thigh. Salt and pepper the turkey thighs on both sides and place (skin side up) on top of the mounds of onion, celery and sage. Using your fingers gently rub the softened butter over tops of the turkey thighs.

(Don’t cover pan.) Roast in a preheated 425-degree oven for 1 hour or until golden brown and juices run clear when turkey is pierced with a fork.
