The process of cooking a traditional omelet often produces dry, tough eggs and undercooked veggies and cool fillings in the center. We’ve all had that happen …. right? Plus, we’ve experienced how difficult filled omelets can be to fold in the pan and then turn out picture perfect onto a dinner plate. Whew! Sometimes I just want  great omelet flavor without all the problems. You too?

So … with the same great taste and ingredients as an omelet, you can have fluffy, soft eggs and perfectly cooked veggies that look and taste delicious! The secrets to making A Perfect Messy Veggie Omelet are using great tasting eggs, like Eggland’s Best, plus slow and low cooking and a non-stick pan. Really, it’s that simple! You can add anything you’d normally put in an omelet …. veggies, cheese, meat. It all works!

How to Cook: A Perfect Messy Veggie Omelet

A twist on the classic omelet makes it easy!

Servings: Makes 1 omelet

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes


  • 1 tbsp unsalted butter
  • 2 large Eggland’s Best eggs
  • 1 tbsp half and half
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 1 small vine ripened tomato, seeded and chopped
  • 1 green onion, sliced


1. Melt butter in non-stick pan over medium low heat.

2. In a small bowl whisk together eggs, half and half, salt and pepper.

3. Add egg mixture to melted butter; when egg whites start to turn white add tomato and green onion.

4. Using a non-stick spatula gently turn over large portions of egg mixture in the pan two or three times over a 3 minute period, or until most of the moisture is gone but eggs still look moist.

5. Immediately place eggs on serving plate to stop cooking process.
